When we offer you a raspberry-filled chocolate, it is not just a berry-flavored stick. After extensive testing, we have found that the best chocolate to highlight the tart notes of raspberries is a Grand Cru Maracaibo Clasificado from Sur del Lago in Maracaibo, Venezuela. We started with a 100% Criollo bean to provide a strong round flavor, with 65% cacao content for just the right amount of astringency to play up the natural tartness of raspberries. And the raspberries are not just any raspberries. We use pulp from berries grown in the Aveyron region in Southern France, famous for its raspberries.
We believe that each chocolate should be a unique experience, blending different intensities, qualities and origins of chocolate with ingredients carefully selected for their intrinsic flavor qualities.
